Strawberry Cupcakes.

Ray and I went for a bike ride last night. It was dusk when we finished the ride and as soon as I stopped pedaling mosquitoes began to eat me alive. While I was swatting at them left and right, they weren’t even bothering Ray. I kept asking, “Aren’t they biting you too?!” He’d shake his head and say, “Nope.” Hurmph. My theory is that the large quantity of FRUIT I have been eating these past few weeks has made my blood super sweet, thereby attracting more mosquitoes. Yes, I’ve been on a huge berry kick. Epic. I’ve went through two flats of strawberries, and I’ve also got a pint of raspberries and blueberries in my fridge. I’ve made strawberry tarts, strawberry jam, salad with strawberries, strawberry smoothies, strawberries with cereal, strawberries with oatmeal, strawberries with waffles, strawberry compotes and now strawberry cupcakes with strawberry frosting. I’ve also frozen bags of them. What else can I do? I have more berries!

I made the strawberry cupcakes to bring to the race this weekend. Strawberry cupcakes are actually quite fickle. I tried just using a white cake recipe and adding some chopped strawberries. Wayyyy too much liquid in the cupcakes with the strawberry addition.

They turned out like rubber. Luckily, I only made half of the recipe. That got to me actually look for a real strawberry cupcake recipe since the ratio of strawberries and liquid ingredients is quite important. I found a recipe at smitten kitchenof course Deb would have one on her site.

The cupcakes were wonderful. They were light and springy with a rich strawberry flavor. I didn’t make her frosting and I wish I did. Again, I took a normal frosting recipe and just added pureed strawberries. Obviously, I did not learn my lesson the first time. The frosting never set up and was like pink glue. And it drove me nuts the frosting never set up. I kept wanting to apologize for them because of that darn frosting.

Frosting issues aside, these were delicious. Yes, our hands got covered with pink glue frosting. I had four leftover cupcakes after the weekend, and I thought they might last a few days. Nope. I ate three that day.
