This has been my go-to meal the past month. It’s Caesar salad-ish. I use spinach and Buttermilk Ranch dressing, but it takes only minutes and tastes (almost) like the real thing.
Fill a bowl with spinach.
Add diced chicken. Or not!
Add in a handful of croutons. I just cut a chunk of bread into cubes and toss with olive oil and garlic powder. Pop in the toaster oven for a few minutes. Done!
Sprinkle in some grated parmesan cheese and drizzle with Drew’s Buttermilk Ranch. MY FAVORITE DRESSING! And I don’t even like ranch?!
Dinner!
This was the perfect meal after my second post-marathon run, on National Running Day no less! I did an easy four miles around town. Oh, and I caved. I got an iPad for traveling and ebooks.

Yes, not many carbs, but still very satisfying! I made a version of it with salmon tonight.
