The time change and my reduced sugar diet has essentially turned me into a zombie this week. Anyone else had a hard time with the clocks springing forward? It’s great to get more daylight, but wicked in the mornings. And I can’t fall asleep at night.
Thus, there have been more frozen burritos this week.
On Thursday, I assembled a sandwich for dinner.
I tried to make it an appealing one, a riff on Red Onion’s famous Red Onion sandwich, which uses honey wheat bread with turkey, green apple slices, bacon, smoked maple cheddar cheese, and a sun-dried tomato mayo.
Toasted. It rocks.
I had my sandwich with baked potato slices – slice them thin, drizzle with olive oil, then sprinkle with cracked black pepper and parmesan – and a tossed salad.
DIGGING The Marriage Plot right now. I’m halfway through it. (I heard the ending is sort of sad though, which is making me weary.)
