I made a sandwich.

The time change and my reduced sugar diet has essentially turned me into a zombie this week. Anyone else had a hard time with the clocks springing forward? It’s great to get more daylight, but wicked in the mornings. And I can’t fall asleep at night.

Thus, there have been more frozen burritos this week.

On Thursday, I assembled a sandwich for dinner.

I tried to make it an appealing one, a riff on Red Onion’s famous Red Onion sandwich, which uses honey wheat bread with turkey, green apple slices, bacon, smoked maple cheddarย cheese, and a sun-dried tomato mayo.

Toasted. It rocks.

I had my sandwich with baked potato slices – slice them thin, drizzle with olive oil, then sprinkle with cracked black pepper and parmesan – and a tossed salad.

DIGGING The Marriage Plot right now. I’m halfway through it. (I heard the ending is sort of sad though, which is making me weary.)

  2. This looks delicious. How was the texture of the apple and onions?

      I liked the sandwich toasted, since I’m not a fan of raw onion. The apple and onions got sort of soft and slightly caramelized.
