Gung Hay Fat Choy! Happy Year of the Rabbit! Although not very authentic, I did whip up an Asian-inspired dinner. I saw this recipe in Real Simple magazine at the airport over the holidays – I usually spend most of my time in airports reading magazines and loving every minute – and thought, “Wow, that looks tasty!” I, in fact, loved this recipe. It’s a dish I’ll make again and again. It’s simple, flavorful, and has Brussels sprouts {my favorite vegetable that I just discovered this year}. I liked the crisp chicken, sautéed sprouts, spicy peppers, and crunchy nut topping. I did make a few changes, using cashews instead of peanuts and brown jasmine rice instead of long-grained white rice.
