Parsnip Fries.


Parsnip fries anyone?

I’m trying to chip away at the large amount of CSA root vegetables that have stockpiled in my fridge while I was away. In addition to celery root, carrots, potatoes, and squash, I have a lot of parsnips. Confession: I’ve never made anything with parsnips. Ha! I’ve been researching some recipes. I plan on making this over the weekend, but I’ve got enough parsnips to play with a few recipes.

I used this recipe from Oh She Glows, which calls for using almond and peanut butter. Interesting….


I found them extra-rooty in flavor at first, but I liked the coating and ended up eating all of them. I found them best dipped in a little ketchup.

    Mmm sounds interesting! I’m always looking for new fry recipes, especially if they are healthier versions. Can’t wait to see what else you do with the parsnips!

    How about parsnip and apple soup? Make soup in the usual way…….brown an onion, a leak and a carrot if you have them. chop up parsnips and one apple, a sour one is best, add stock simmer til cooked then whizz in the whizzer! Yummy! Parsnips are a rarity in France, they see it as an old fashioned vegetable (?) so I actually miss them quite a lot!
