Parsnip fries anyone?
I’m trying to chip away at the large amount of CSA root vegetables that have stockpiled in my fridge while I was away. In addition to celery root, carrots, potatoes, and squash, I have a lot of parsnips. Confession: I’ve never made anything with parsnips. Ha! I’ve been researching some recipes. I plan on making this over the weekend, but I’ve got enough parsnips to play with a few recipes.
I found them extra-rooty in flavor at first, but I liked the coating and ended up eating all of them. I found them best dipped in a little ketchup.
