MONDAY NIGHT MENU PLAN: Spicy Panko Salmon Salad


Oh, the joyous day continued. I got to go to 5:15 p.m. Body Pump class for the first time in months and cook dinner a whole hour earlier today. I’m continuing on Week Two of meal planning. {Mindi will be so proud.} Here’s the short-list of meals:

Monday: Spicy Panko Salmon Salad {because I had leftover Panko from last week & need to eat more fish}

Tuesday: Sweet & Savory Roasted Vegetable Salad {because I’m swimming in CSA root vegetables}

Wednesday: Lentil and Lime Rice {because I didn’t get to make this last week}

Thursday: Beet Pizza Dough Calzones {because it’s the most appealing thing I can think to make with my beets}

Friday: Leftovers or something more fun than me cooking:)

I realized it had been a while since I have had fish, like a while. I can’t even remember? I have a lot of salad greens from my CSA share too. Since I find cold salads not filling and sort of lackluster, I thought adding spicy Panko-crusted salmon pieces combined with roasted Brussels sprouts would make the salad more filling and appealing. It worked.


I got out two bowls: one with a beaten egg, and the other with Panko crumbs, garlic powder, and a dash of cayenne pepper. I cut the salmon into small pieces, rolled them in the beaten egg, then the crumbs, then sauteed for a few minutes in a hot skillet with olive oil.


I tossed my greens with some of Jessie’s balsamic vinaigrette, another CSA good.


Topped with the salmon pieces and roasted Brussels Sprouts {cooked this way: cut in half, drizzle with olive oil, season with salt & pepper, and roast at 425 for about 15 minutes.}


This was a quick and easy salad.


Yum! The Dude was all in my face wanting the salmon.
