TUESDAY NIGHT MENU PLAN: Sweet Potato Hash

This dish is super quick and easy, literally taking less than half an hour. {I know because I was rushing from the gym to a friend’s house for a knitting night!} Mindi & Tom made this dish for me over the weekend and I was just over the moon for it. They both are such good cooks and inspire me in the kitchen. Half of my menu plan this week is from dishes they cooked up over the weekend. I think Tom adapted this recipe from an Eating Well cookbook. So, it is yummy and healthy.

Directions

Take your chopped sweet potatoes and cook over medium-high heat in a cast iron skillet. Once the potatoes are soft, add a shallot.

Then add some minced garlic and spinach.

Salt and pepper.

Once the spinach cooks down {about a minute}, crack some eggs over top.

Sprinkle with cheese. I like a sharp cheddar.

Broil until eggs are set and cheese is bubbling.

      Yay! It’s simple and delish….and versatile. I might try adding extra veggies next time. I think red pepper would be good in it too.

    I made this tonight and it was fantastic! Total lifesaver for a hectic week … and I never would have thought to add the sharp cheddar to this combination. It was delicious.

    It would be nice to be able to print out this recipe with the ingredients and directions. I guess I can write it out….it’s simple enough…..but it sure would be nice to be able to just hit “print” and zip it into my recipe binder. Thanks for the dinner idea for tonight! Reeeally looking forward to trying it!
