I highly recommend making this drink to put you in the holiday mood. I am a bit bummed that I can’t go home for Thanksgiving – due to a tremendous amount of projects due – but this brightened my day. Make it soon!
Instructions
Make some espresso.


In a small saucepan, add one cup of milk.

Two teaspoons of sugar.

One heaping tablespoon of canned pumpkin. Cook over medium heat, until steaming. Remove from heat.

Add 1/4 teaspoon pumpkin pie spice. I made my own by mixing cinnamon, ground ginger, allspice, and nutmeg.

Add one teaspoon vanilla.

Whisk then transfer to blender for about 15 seconds.

Pour into mug.
Top with espresso.

Sprinkle with more spice and enjoy. Amazing. Mmmm…..I made it this morning after a cold morning run with Amanda. Heaven!
Pumpkin Spice Latte
Slightly adapted from The Kitchn
Makes one serving
- 1 cup milk (I used skim, but I’m sure whole would be even better)
- 1 tablespoon canned pumpkin
- 2 teaspoons sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon pumpkin pie spice (This makes one teaspoon of pumpkin pie spice: 1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/8 tsp allspice, 1/8 tsp ground nutmeg)
- 1 shot of espresso (about 1/4 cup)
Directions
1. Make the espresso. Don’t know how? Read about it here.
2. In a small saucepan, combine milk, pumpkin, and sugar. Cook over medium heat, until steaming.
3. Remove from heat and whisk in vanilla and spice. Transfer to blender and pulse for about 15 seconds. The mixture should be foamy.
4. Add to cup and top with espresso. I sprinkled a little extra spice on top.

I’ve been making “poor man’s pumpkin coffee” by adding spices to my coffee grounds before brewing…. then mixing lots of milk and sugar into my cup, and topping with a dollop of whipped cream.
But this recipe takes the cake… er, pumpkin!

Just this week Starbucks started serving Pumpkin Spice Lattes again. Unfortunately, they cost almost $5. I love the way they make it there, but I might have to seek alternatives that are cheaper so I can still enjoy my favorite drink of the season

OMG…you have no idea how BADLY I want/need this. However, in Germany there is no such thing as pumpkin filling…or vanilla extract. But, just looking at these pictures and remembering how it tastes makes it a little better!! Thank you for sharing!!!

{That’s actually sort of cool that there’s no pumpkin filling. I like homemade things. This would probably be really good if I roasted the pumpkin and made homemade filling. I remember when I studied abroad in the Netherlands, there was just less items in the grocery stores. We have way too much in the States.}

This looks amazing. I’ve never seen a pumpkin latte recipe that used actual canned pumpkin instead of just the seasoning. I will probably be making this around Thanksgiving but substituting strong coffee for the espresso.

This is just the thing I’ve been searching for! I work in a coffee shop and get completely and utterly spoiled with all the free deliciousness I consume, so when it’s time to go home I’m left with no fancy gadgets just a french press, (which I adore, don’t get me wrong) I get a little tired of the same old thing. Good question….I always have leftover pumpkin. I like making pumpkin bars, bread, or muffins. Some people add it to smoothies! Or, I’ve even made a really good pumpkin pizza dough. You don’t taste the pumpkin in it, but the dough is super light and fluffy.
