Pumpkin Spice Latte

I highly recommend making this drink to put you in the holiday mood. I am a bit bummed that I can’t go home for Thanksgiving – due to a tremendous amount of projects due – but this brightened my day. Make it soon!

Instructions

Make some espresso.

In a small saucepan, add one cup of milk.

Two teaspoons of sugar.

One heaping tablespoon of canned pumpkin. Cook over medium heat, until steaming. Remove from heat.

Add 1/4 teaspoon pumpkin pie spice. I made my own by mixing cinnamon, ground ginger, allspice, and nutmeg.

Add one teaspoon vanilla.

Whisk then transfer to blender for about 15 seconds.

Pour into mug.

Top with espresso.

Sprinkle with more spice and enjoy. Amazing. Mmmm…..I made it this morning after a cold morning run with Amanda. Heaven!

Pumpkin Spice Latte

Slightly adapted from The Kitchn

Makes one serving

  • 1 cup milk (I used skim, but I’m sure whole would be even better)
  • 1 tablespoon canned pumpkin
  • 2 teaspoons sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice (This makes one teaspoon of pumpkin pie spice: 1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/8 tsp allspice, 1/8 tsp ground nutmeg)
  • 1 shot of espresso (about 1/4 cup)

Directions

1. Make the espresso. Don’t know how? Read about it here.

2. In a small saucepan, combine milk, pumpkin, and sugar. Cook over medium heat, until steaming.

3. Remove from heat and whisk in vanilla and spice. Transfer to blender and pulse for about 15 seconds. The mixture should be foamy.

4. Add to cup and top with espresso. I sprinkled a little extra spice on top.

    I’ve been making “poor man’s pumpkin coffee” by adding spices to my coffee grounds before brewing…. then mixing lots of milk and sugar into my cup, and topping with a dollop of whipped cream.
    But this recipe takes the cake… er, pumpkin!

    I’ve never owned/used an espresso machine…. but your suggestion is tempting me to purchase one. And I LOVE the idea of canned pumpkin! :D

  20. Just this week Starbucks started serving Pumpkin Spice Lattes again. Unfortunately, they cost almost $5. I love the way they make it there, but I might have to seek alternatives that are cheaper so I can still enjoy my favorite drink of the season :) . I’ll have to try this recipe soon! Thanks.

  36. OMG…you have no idea how BADLY I want/need this. However, in Germany there is no such thing as pumpkin filling…or vanilla extract. But, just looking at these pictures and remembering how it tastes makes it a little better!! Thank you for sharing!!!

      {That’s actually sort of cool that there’s no pumpkin filling. I like homemade things. This would probably be really good if I roasted the pumpkin and made homemade filling. I remember when I studied abroad in the Netherlands, there was just less items in the grocery stores. We have way too much in the States.}

    I love Pumpkin spiced lattes and the season for them is fast approaching. I will be trying this recipe. I don’t have an espresso maker though…. Can I do this with regular coffee?

As a previous Washington State dweller for 25 years and a barista at a small, independent coffee shop, there is nothing quite so comforting as a good cup of coffee!! Keep up the good work!

    Delish. These are my #1 guilty pleasure since they are often made with non-organic milk and loads of high fructose corn syrup. Love the simple, straight forwardness of canned pumpkin, spices and milk. You just made fall a whole lot more lovely for me.

    Unfortunately I didn’t have canned pumpkin but the other spices made the coffee taste like Christmas!
    And I bought this espresso machine you use! Best coffee I ever had!!

  178. That’s a different way to make it. Personally, I prefer Starbucks, but I’d be willing to give this a whirl. Thanks for the recipe! And it’s so true, holiday drinks do make the season more festive!
