IN THE KITCHEN: Mary’s Potstickers. Awesome. Awesome. Awesome.
Yes, that is three “Awesomes” for Mary’s Potstickers. Three! I happily munched on these potstickers more than a few times this weekend. They were filled with pork, cilantro, cabbage, carrots, swiss chard, green onions, ginger, garlic and tons of other goodies all rolled up in a dough-like pouch. The bottoms are browned from the oil in the skillet and the top is steamed. She would cook them in small patches and we would eat them hot from the skillet , dunking them in this homemade soy/chili garlic/honey sauce. Is your mouth-watering yet? It should be. I actually had my first potstickers not that long ago at a potluck. Again, I ate more than a few. In fact, they were my favorite dish at the potluck. Shortly thereafter, I deemed them the perfect food for a crowd and brought some (pre-made from City Market) to a New Year’s Eve party. I can’t wait to make these things. They are just too fun to sit around the table and enjoy. I’ll show you what we did.

I like to close my eyes and savor the bite. I might let out a verbal “mmmmmm”.
Mary says to make them on the weekend because they can be time-consuming. However, she said to just use a food processor for the filling instead of chopping everything – just don’t over process. She got the pork potsticker recipe from Use Real Butter (a cool cooking/photography blog). They also have a shrimp version. And she also looked at eyeballing it for ideas, but really, you can add just about anything to these. Right? It’s all good.












Yay! I’m so glad you tried the potstickers- they are super fun to make! I have made them two more times since I blogged about them, and I started making the dough in my pasta machine, which makes the dough much smoother and easier. Great photos!
And now I’m kind of intrigued by this whole running barefoot thing. Is it easier on the feet?

Hi Jordan. I loooooved the potstickers. Amazing! A pasta machine is a great idea. Another meal I’d like to make from scratch is homemade pasta. I’ve heard it’s simple, yet I’ve never made it! Mary is very into barefoot running. I haven’t done it yet. I might try it after my marathon is all done. I know that you have to build up very slowly, but barefoot running is supposedly less strain on your body. You strike differently on the ground – landing on the front of your foot rather than with a heel strike. Mary says that it is actually impossible to run with a heel strike barefoot. I know the book Born To Run talks a lot about barefoot running.
