As I lazed around the house yesterday, I did discover a great new recipe for Spicy Chicken Peanut Noodles. I got the recipe off Tasty Kitchen, as I tried to figure out what to make with chicken, cucumbers, a red pepper, and leftover parsley in my fridge. This was a great meal after my long run because it incorporated just the right amount of protein, veggies, and carbs. And it tasted pretty amazing. I’ve never made a peanut sauce before and it is delicious! I ate my bowl of pasta a little warm, but this dish would be good served cold too. In fact, this is an excellent potluck meal.
It does have a lot of ingredients, but it’s pretty quick to prepare. You could also prepare things ahead of time and then assemble later.
For the chicken:
Add the peanut oil to a bowl.
Add some brown sugar.
A little bit of soy sauce.
Pour into pan with the cut-up chicken breasts. Cook chicken until thoroughly done (no pink centers). Set aside.
For the spaghetti:
Cook some spaghetti according to directions on box. Drain and return to pot, set aside.
For the cucumber sambal:
Dice a cucumber, red pepper, and scallions. Add to a small bowl along with 3 T rice wine vinegar.
Add 1 tsp. red pepper flakes for a little heat. Mix together and set aside.
For the peanut sauce:
In small saucepan, add the creamy peanut butter and chicken broth.
Add some brown sugar.
Rice wine vinegar.
Fresh lime juice.
Smells amazing!
Chopped fresh ginger.
More soy sauce.
and a little bit of Thai chili sauce. Let simmer for 1-2 minutes. Cool and set aside.
Preparing the Spicy Chicken Peanut Noodles:
Add the noodles to a large bowl.
Top with cooked chicken.
Add the cucumber sambal.
Pour in the peanut sauce and add black pepper. Toss to combine.
I helped myself to a large bowl and added more fresh parsley.
